Vegan Sweet Potato Coconut Soup – The Perfect Dinner for a Good Night’s Sleep

  1. Peel the sweet potatoes and cut them into cubes. Wash and finely chop the spring onions.
  2. Heat the sesame oil in a saucepan. Sauté the sweet potatoes, most of the spring onions (reserve a small portion for garnish), and the ginger for 2–3 minutes. Add the curry powder and stir well.
  3. Pour in the vegetable stock and coconut milk. Bring to a gentle boil, then let it simmer for about 20 minutes, until the vegetables are soft.
  4. Blend the soup until smooth and creamy using a hand blender.
  5. Serve in bowls and garnish with the reserved spring onions and, if desired, lightly toasted sesame seeds.
