Vegan Sweet Potato Coconut Soup – The Perfect Dinner for a Good Night’s Sleep

Based on Ayurvedic principles, the combination of sweet potato, coconut milk, ginger, and warming spices helps ground Vata, soothe Pitta, and promote relaxation in the evening.

Recipe
Ingredients
- 500 g sweet potatoes
- 200 ml coconut milk
- 1 bunch of spring onions
- 3–4 tbsp sesame oil
- 700 ml vegetable stock
- 2 tbsp curry powder
- 1–2 tsp ginger, finely chopped
Instructions
- Peel the sweet potatoes and cut them into cubes. Wash and finely chop the spring onions.
- Heat the sesame oil in a saucepan. Sauté the sweet potatoes, most of the spring onions (reserve a small portion for garnish), and the ginger for 2–3 minutes. Add the curry powder and stir well.
- Pour in the vegetable stock and coconut milk. Bring to a gentle boil, then let it simmer for about 20 minutes, until the vegetables are soft.
- Blend the soup until smooth and creamy using a hand blender.
- Serve in bowls and garnish with the reserved spring onions and, if desired, lightly toasted sesame seeds.
