  1. Separate the egg whites from the egg yolks. Place the egg whites and xylitol in a bowl and whisk until the mixture becomes light and foamy.
  2. In another bowl, mix the yogurt, egg yolks, vanilla, baking powder, lemon zest, lemon juice, and flour. Slowly fold the whisked egg whites into the mixture.
  3. Pour the batter into a round baking pan lined with baking paper.
  4. Place the pan on a baking tray filled with water (optional). This step helps create a softer sponge-like texture during baking.
  5. Bake in the middle of the oven at 180 °C (356 °F) for about 30–40 minutes. After around 20 minutes, cover the cake with baking paper to prevent the top from browning too much.
  6. When fully baked, let the cake rest for about 5 minutes, then carefully remove it from the pan using the baking paper.
  7. Allow the cake to cool completely before serving. It can be enjoyed plain, with fresh fruit, or with cashew cream.

Dosha Recommendations

Vata:
A good dessert option for Vata. Dairy products have grounding and nourishing qualities that help balance Vata.

Suitable for Pitta but should be eaten in moderation, especially during hot summer months.

Kapha:
Not ideal for Kapha because dairy products, sweeteners, and flour may aggravate Kapha. If consumed, eat in moderation at lunch and combine with a light vegetable-based meal.
