This Ayurveda chicken tortilla soup draws inspiration from aspects of Mexican cuisine for a unique and delicious combination of flavors. In addition, it is a protein-rich recipe, balanced in macro and micronutrients and rich in fiber. Thus, she assists in the slimming process!
As a source of lean protein, chicken breast is used. Corn is a source of carbohydrates and fiber and olive oil is a source of healthy fats.

Chicken Tortilla Soup
Ingredients
- 1 tbsp olive oil
- 1 medium onion peeled and finely chopped
- 2 medium red bell peppers seeded and finely chopped
- 1 garlic clove peeled and finely chopped
- 1 cup mild or medium salsa
- 2 cans reduced-sodium chicken broth (or vegetable broth)
- 1 can plain or seasoned fire-roasted diced tomatoes
- 2 cups diced cooked chicken breast or a can of drained black beans
- 1 cup fresh or frozen corn kernels
- 1 tbsp chili powder
- Salt and freshly ground black pepper to taste
- 1/2 lime juice optional
- 1/2 cup (122g) nonfat plain yogurt or fat-free sour cream for garnish
- 28 g baked tortilla chips (about 18) crumbled,
- 8 g sprigs (four)
- fresh cilantro
Instructions
- Heat the oil in a medium pan over medium heat. Add the onion, red pepper, and garlic, and cook, stirring occasionally, for five minutes, or until soft. Add the salsa, broth, tomatoes, chicken, corn, and chili powder. Bring to a boil, then reduce the heat and simmer the soup partially covered for 15 minutes.
- Add the salt and pepper to taste and lime juice if desired.
- Ladle into bowls and garnish each with two tablespoons each of yogurt and tortilla chip crumbles, and one sprig cilantro.
