Sweet Potato Coconut Soup

Equipment

  • 1 cooking pot
  • 1 hand blender or blender
  • 1 small pan

Ingredients
  

  • 500 g sweet potatoes
  • 200 ml coconut milk
  • 1 bunch of spring onions
  • 3-4 tbsp sesame oil
  • 700 ml vegetable stock
  • 2 tbsp curry powder
  • 1-2 tsp ginger, chopped finely

Instructions
 

  • Peel the sweet potatoes and cut them into cubes. Wash and chop the spring onions thoroughly
  • Heat sesame oil in a saucepan and sauté the sweet potatoes, spring onions (a small portion can be sprinkled on the soup later), and ginger for about 2-3 minutes and season with curry powder
  • Pour together the vegetable broth and coconut milk and heat. Let the whole thing simmer for about 20 minutes
  • Then puree the soup well with the hand blender and the soup is ready and can be divided into soup bowls.
  • Optional: Roast the sesame seeds and sprinkle them together with the spring onions that you have set aside as a garnish.

Recommendations for doshas:
Good soup for Vata and Pitta types.
For Kapha sweet potatoes are less recommended. Use regular potatoes or half cauliflower, and half potatoes.
