Cheesecake with strawberry topping

Ingredients
  

  • 100 g oat flakes
  • 100 g almond
  • 1 tbsp cacao powder
  • 50 ml coconut oil
  • 500 g soft curd cheese
  • 500 g cream cheese
  • 4 eggs
  • 150 ml sweetened condensed milk
  • 50 g sugar of your choice
  • 3 tbsp starch or rice flour
  • lemon zest
  • vanilla
  • 400 g strawberries, fresh or frozen
  • 2 tbsp honey
  • 3 sheets gelatin

Instructions
 

  • In a food processor, grind oats and nuts, add cacao and coconut oil. Add a bit of water if it does not stick together. Spread the mixture in a cake form and press it evenly on the bottom of the form.
  • You can also use oat cookies or other cookies and butter. 200 grams of cookies mixed with 100 grams of melted butter.
  • In a bowl, mix curd cheese, eggs, sugar, condensed milk, cornstarch, and vanilla.
  • Preheat the oven to 180°C. Pour the mixture into the cake form and bake it for about 40 minutes.
  • Let the cake cool down and prepare the strawberry topping.
  • Hydrate gelatin in cold water for 10–15 minutes. Blend the strawberries and cook them for 2–3 minutes. Let it cool a bit, then mix the honey and gelatin. Stir until it dissolves completely.
  • Pour the strawberry sauce and let it sit in the fridge overnight.

Recommendations for doshas:

Vata:
is a nourishing and satisfying dessert, full of protein, and should be better consumed for lunch when the digestive fire is strong.
Pitta: is suitable for Pitta. Milk products like fresh, unfermented cream cheese are generally neutral for pitta energy.
Kapha: not a good choice for Kapha
