Zoodles (zucchini noodles) with vegan cheese sauce

A low-carb, dairy-free, and gluten-free lunch that is perfect for summer. It is a great alternative for people with diabetes.

Ingredients
  

Zoodles

  • 300 g Zucchini

Vegan cheese sauce

  • 200 g cauliflower
  • 150 g potatoes
  • 2 tbsp nutritional yeast
  • 50 g cashews
  • 200 ml water
  • 1-2 cloves garlic
  • 6-8 cherry tomatoes
  • 1/2 tsp turmeric powder
  • A pinch of black pepper
  • Himalayan or sea salt

Instructions
 

  • First, you need to soak the cashews overnight or for 30 minutes in hot water.
  • Wash and cut the potatoes and cauliflower. In a pan, add water and salt, and boil them until soft. Boil them separately or add the cauliflower later, as it needs less time to be cooked. Let it cool down a bit.
  • Transfer the potatoes and cauliflower to a blender. Add cashews, nutritional yeast, water (use the remaining water from boiling the vegetables), garlic, and spices. Mix it very well until it has a creamy consistency. Add more water if it is too thick.
  • Using a spiralizer, transform the zucchini into spaghetti. Warm the sauce and mix it with the zoodles.
  • Garnish with fresh basil, the cherry tomatoes cut in half, and some olive oil (optional).
  • Relax and use all your senses, enjoy this colorful, healthy meal.

Benefits:

Nutritional yeast is a good substitute for Parmesan cheese, especially if you're a vegan or trying to avoid milk products. This ingredient has a savory, umami flavor that can enhance the taste of different dishes.
And even more important, nutritional yeast is a good source of dietary fibre, vitamins, especially B vitamins, and protein.
Recommendations for doshas:
Vata: Instead of using raw zucchini and tomatoes, you can stir-fry them with some ghee and garlic before mixing them with the sauce. It is essential that you eat this meal warm.
Pitta: Is a good meal. Can use mint leaves instead of basil for its cooling effect. Reduce the amount of garlic.
Kapha: Zucchini is not the best option for Kapha. Still, compared with a classic pasta dish, which brings heaviness to the body, this recipe offers a lighter alternative. Adding more spices will improve digestion.
