First, you need to soak the cashews overnight or for 30 minutes in hot water.
Wash and cut the potatoes and cauliflower. In a pan, add water and salt, and boil them until soft. Boil them separately or add the cauliflower later, as it needs less time to be cooked. Let it cool down a bit.
Transfer the potatoes and cauliflower to a blender. Add cashews, nutritional yeast, water (use the remaining water from boiling the vegetables), garlic, and spices. Mix it very well until it has a creamy consistency. Add more water if it is too thick.
Using a spiralizer, transform the zucchini into spaghetti. Warm the sauce and mix it with the zoodles.
Garnish with fresh basil, the cherry tomatoes cut in half, and some olive oil (optional).
