Ginger Carrot Soup

In Ayurveda, ginger is known to help with digestion and is used to treat nausea and colds. Carrots are high in Vitamin An and help with digestion.

Equipment

  • 1 Blender optional

Ingredients
  

  • 1 tbsp ghee
  • 1 tbsp grated fresh ginger
  • 4 cups chopped carrots
  • 4 cups chicken or vegetable broth
  • salt and pepper

Instructions
 

  • Heat the ghee in a large pot over medium heat.
  • Add the ginger and cook for 1 minute, stirring frequently
  • Add the carrots and broth and bring to a boil
  • Reduce the heat to low, cover, and simmer for 15-20 minutes until the carrots are soft.
  • Use an immersion blender or transfer to a blender and blend until smooth.
  • Season with salt and pepper to taste.
