Add the ginger and cook for 1 minute, stirring frequently
Add the carrots and broth and bring to a boil
Reduce the heat to low, cover, and simmer for 15-20 minutes until the carrots are soft.
Use an immersion blender or transfer to a blender and blend until smooth.
Season with salt and pepper to taste.
