Low Carb Bread Rolls
An easy to make bread recipes with a minimal amount of carbohydrates, protein rich which makes it perfect for diabetes or for weight loss. It needs a special ingredient, potatoe fibers, which is not so well known, but cand be order mostly online. It has a similat structure like psyllium husks.

- 400 g curd cheese or cottage cheese
- 4 eggs
- 100 g potato fiber
- 30 g psyllium husk powder
- 100 ml hot water
- 16 g baking powder
- 2 tbsp vinegar
- Salt to taste
- Cumin optional
- Fennel seeds optional
- Sesame or sunflower seeds for topping optional
In a bowl, mix the dry ingredients.
In a separate bowl, whisk together the cottage cheese or curd cheese and eggs.
Add the wet mixture to the dry ingredients.
Add the hot water and vinegar and mix thoroughly.
Let the dough rest for 20 minutes.
With wet hands, shape the dough into bread rolls.
Sprinkle with sesame or sunflower seeds, if desired.
Bake at 150°C (300°F) for approximately 20 minutes, or until cooked through.

Potato fiber and psyllium absorb a lot of liquid, so resting the dough is essential. If you're unfamiliar with the flavor of potato fiber, cumin or fennel seeds can add a more traditional bread-like flavor.

Vata: is good tolerated
Pitta: use cottage cheese, instead of fermented curd cheese
Kapha: best choice would be using goat cottage cheese, if available. These
bread rolls are a better option than regular bread, ,as they contain no grains.
When choosing a light diary product, this recipes should not agravate Kapha
dosha.
