Kitchari(Authentic from Ayurveda)

Kitchari is the first food on our mind when we think of Ayurveda. It is made with few ingredients that we can find all over the world. In addition, it is very easy to digest and a good combination of protein and carbohydrates. Lastly, Kitchari can balance all doshas.

Ingredients
  

  • 1 tbsp Ghee
  • 1 cup Lentils Soaked for 5-6 hours
  • 1/2 cup Rice Soaked for 5-6 hours, basmati rice is better for this recipe.
  • 1/4 tsp Cumin seeds
  • 1/2 tsp Turmeric
  • 1 cup Water
  • Black or rock salt to taste

Instructions
 

  • Soak the lentils and rice for at least 5 hours (you can let it soak overnight). Remember to change the water before cooking.
  • Add the Ghee to the pan and let it melt over low heat.
  • Add the cumin seeds and let it brown a little.
  • Add the lentils and rice together with the soak water (change before cooking) and stir. When you add it, it's going to make a sound, it's normal.
  • Add turmeric and salt and stir it for a while.
  • Add the water, stir, cover the pan, and wait until the rice is cooked (10-15 minutres). Don't let the kitchari dry out, it should be a little liquidy.
